鼻頭附近的海釣漁夫 |
在鼻頭漁村附近,濱海公路旁有間「五聖廟」,廟旁有個推車的賣魚婆婆,經過常看到她,這回因為臨時的好奇停下來跟她聊;婆婆賣的都是海釣的魚,有些於是船釣,有些是磯釣,今天問她的時候,只剩下黃雞魚。
黃雞魚是一種漁村常吃的魚,刺很硬,骨肉的構造簡單像是肉魚,但黃雞魚的肉質再紮實一點,味道也比較乾淨少腥味,有一說因為口感類似雞肉,加上魚鰭魚嘴是漂亮的黃色,而叫做黃雞魚。
黃雞魚的數量很多,價錢不高,過去因為利潤薄,而在都會地區的海產店較少見。
今天賣魚的婆婆還剩下兩隻中型的黃雞,買了之後,她還有一堆小的黃雞魚,乾脆全包了讓她早收工;回家才想到,這黃雞也得殺魚清腹內啊,接著是一陣廚房戰場...
小黃雞魚很適合薄鹽乾煎至魚鰭酥黃,類似肉魚的煎法,魚頭內側是漂亮的橘紅色,非常好吃,只需要注意背鰭的次很硬,不要傷到口腔。
